Hot And Sour Prawn Soup |

Ingredients -
1 onion
|
1.Peel
and chop the onion. Cut the chillies lengthwise, remove seeds and finely
chop them. Peel and finely chop the ginger. 2. Heat oil in a large heavy based saucepan over medium heat. Add onion, chillies and ginger, stirring frequently sauté until onions are soft, about 5 minutes. Add mushrooms and sauté for 2 minutes. 3. Add stock, lemon grass and vinegar. Bring to boil, cover and simmer for 12-15 minutes. 4. Meanwhile chop the watercress, discard the stalks. Add prawns and chopped watercress to the soup and simmer for 2 minutes. Remove the lemon grass and adjust the seasoning with salt and pepper |
