1 tb Cumin seeds
4 ts Coriander seeds
1-2 ts cayenne-pepper
1 ts Saffron threads
3 tb Hot milk
6 tb Ghee or clarified butter
2 md Onions, chopped
5 Black cardamom pods-cinnamon sticks
4 Cloves
3 Bay leaves
1 Fresh ginger, grated
4 lg Garlic cloves, minced
2 lb Boneless lamb, cut into-1/2-inch cubes
1 c Fresh, sweet, unflavored-yogurt
1/4 c Heavy cream
1 tb Rose water
1/4 c Blanched almonds
1. Grind
the cumin and coriander seeds in a spice mill, combine with
the red
pepper and place near the stove.
2. Soak the saffron in hot milk.
3. Heat the ghee or clarified butter in a large, shallow,
heavy pan.
4. Stir in the onions, cardamom pods, cinnamon, cloves and
bay leaves. Cook
over medium heat, stirring frequently, until the onions
begin to turn reddish
brown, about 15 minutes. Add the ginger and garlic and cook,
stirring
constantly and scraping the bottom of the pan, until the
onions are reddish
brown.
5. Stir in the ground spices and cook, stirring, for about
10 seconds, or until
the spices release their fragrance.
6. Dry the meat with paper towels.
7. Stir half of the meat into the spice mixture.
8. Increase the heat to medium high and cook, stirring for a
few minutes,
making sure all the meat is coated with the spices.
9. Stir in the remaining meat, and cook as before, scraping
the bottom of the
pan. If the mixture gets too dry, splash in a little water.
10. Turn the heat to medium. Start adding the yogurt 1
tablespoon at a time,
stirring and incorporating it into the mixture before adding
the next
tablespoonful. Continue adding in this way until all the
yogurt has been used.
Turn the heat to low. Cover the pan and simmer the meat for
about 1 1/2 hours,
or until the meat is very tender. If necessary, splash in a
little water from
time to time. When the meat is tender, and salt to taste.
11. Stir the cream and cook until the sauce is thick. Stir
in the saffron and
rose water and heat thoroughly.
12. Fry the almonds in a little oil until golden brown.
13. Serve the lamb hot garnished with the almonds. (NOT ALL
THE SPICES IN THIS
DISH ARE MEANT TO BE EATEN)
14. Serve this dish with a pilaf or any naan bread

Preserve eggs for a
longer period
!) Wash the eggs and put them slowly in a container full of
lime water or mustard oil. The eggs will not only be
preserved for long - they will not get spoiled either.

Drug for Restless Legs Syndrome
 |
|
A drug to treat Restless Legs Syndrome has become the
first to be granted a European licence.
The condition, a disorder of the
nerves, causes a tingling, itching sensation, and
unexplained aches and pains in the lower limbs. It has been
estimated that it affects as many as 10% of the population.
The new drug, Mirapexin, has been approved for use by the
European Medicines Agency to treat moderate or severe cases.
There are currently no other medications licensed for the
treatment of Restless Legs Syndrome (RLS) in the UK. RLS,
also known as Ekbom's syndrome, can affect one or both legs,
and symptoms are sometimes felt in the arms as well.
They are most likely to be experienced at night,
occasionally meaning the sufferer cannot fall asleep easily,
and will often have a strong desire to get up and walk
about.
Another symptom associated with RLS are involuntary leg
movements, particularly when asleep, which can lead to the
sufferer kicking out and waking either themselves or their
sleeping partner.
US research found people with diabetes were at particular
risk, as were those who did little exercise.
Some symptoms can be relieved by applying heat pads. The
condition can also be prevented by cutting down on alcohol
and caffeine.
Severe impact
Dr Ray Chaudhuri is a consultant neurologist and head of the
National RLS Clinic at King's College Hospital, London - the
only specialist clinic of its type in the UK.
He said the lack of sleep associated with restless leg
syndrome could have profound implications.
"The disruption can lead to excessive daytime sleepiness,
compromised work performance and significantly impact on
quality of life.
"The consequences of constant sleep interruptions can be
devastating for some people, as the tiredness and lack of
concentration can led to depression.
"There is a real need for effective treatments and the
introduction of Mirapexin is very welcome news for patients
more severely affected by the condition."
However, Dr Chaudhuri said only around 500,000 of the
estimated 4m sufferers in the UK were likely to benefit from
the drug.
He said doctors currently treated the condition with a range
of drugs, but none of these had been licensed.
Some doctors were reluctant to use these medications, as
they were used, in much bigger doses, to treat Parkinson's
patients. Mirapexin, produced by Boehringer Ingelheim, is
unlikely to be considered by the NHS drug watchdog, the
National Institute for Health and Clinical Excellence, for
at least a year.

Be Forgiving
Dear kids, how is the hot weather dealing with you?
May Allah, in His mercy, send rain showers and make weather
pleasant. Ameen.
A few days back, my younger brother went out with his best
friend. When he returned home, his mood was bad. Right after
greeting parents and informing them of his return, he
stormed to his room. I knew something was wrong with him. I
tiptoed upstairs to his room and what I saw thorough the
little slit in the almost shut door… he had pulled down one
of his most cherished picture (that he had with his above
mentioned friend). He was feverishly tearing it to pieces
while muttering something.
It seemed something had gone wrong between the two friends
who claimed to be made for each other. Indeed their
friendship had stood the test of times since the last couple
of years. I walked into brother's room after the knock. I
inquired him of what the matter was. He told he had a tiff
with his friend. The row was such a heated one, that finally
the two decided to have put an end to their friendship. And
that was the reason he had torn the picture. He wanted to
forget his buddy completely. I told him that it was just
anger and soon the fuming will go down. I left his room
because I knew he needed some time and peace to calm him.
Once in my room I gave a shot to this and had a very
illuminating experience. I realized we humans err, because
we are not perfect like angels. Yet we forget that people
around us are humans too. In a fit of anger, most often over
very petty matters, we often banish people from our lives.
Allah is so great. We are His slaves. Yet we often let Him
down. If He would have been so strict with us, who can
expect to find salvation? My learning from this little
pondering has made me more grateful and obedient towards
Allah for He is so merciful and forgiving. He does not
forget me when I let him down. So I shall also strive to
abstain from what He has forbidden and fulfill His
commandments.
Dear folks, think about what we talked of today. You will
also have an enlightening experience.
