1.Wash the rice and soak
in plenty of water for about 11\2 hours. 2. Heat the oil in a heavy based saucepan. Add the onion and garlic and cook until just soft. 3.Toss in the rice and cook for 3 minutes, stirring frequently. Add the broth, saffron, and parsley. 4. Cover and reduce the heat to low. Cook for 15-18 minutes or until the liquid is absorbed. 5. Fluff with a fork before serving. Serve with Raita. |
