Chicken and Barley Soup |

Ingredients -
2 tbsp.
butter |
1. Heat butter
and oil in a large heavy
based saucepan over medium heat.
Add onions, sauté, until onions are soft. 2. Add vegetables; sauté 8 minutes. Add stocks, bring to boil. Reduce heat and simmer 15 minutes. 3. Add barley and oregano. Simmer until barley is tender, stirring occasionally, about 25-30 minutes. 2. Add chicken to soup; simmer until just cooked, about 8 minutes. Mix in coriander. Season with salt and pepper. serves: 6 |
