Lentil Soup With Sausage |

Ingredients -
5 tbsp. olive oil |
1. Heat
3 tablespoons of oil in
a large heavy based saucepan
over medium heat. Add
onions, stirring occasionally, sauté onion, until golden brown,
about 6-8 minutes. 2. Add carrots and cook, stirring, until softened, about 5 minutes. 3. Add lentils, water, salt, pepper and chili powder, if using. Bring to a boil, reduce heat to low, covered and cook, until lentils are tender, about 30 minutes. 4. While lentils are cooking, heat remaining oil in a non stick skillet over medium heat, add sausages and brown them on all sides, about 5 minutes. 5. Cool sausage slightly, then cut them into 1/2-inch-thick pieces. Add sausage and coriander to the soup and stir in vinegar. Makes 6 servings. |
