Red Cabbage Salad |

Ingredients -
300 g. red cabbage |

Shred cabbage finely, discarding any coarse leaves. Peel, core and dice the
apples. Peel and grate the carrots. 2. Place salt, pepper, mustard and vinegar in a small bowl and stir to dissolve the seasoning. Add olive oil and whisk until the mixture becomes emulsified and slightly thickened. 3. Place cabbage, apple and carrot in a salad bowl. Pour dressing over the salad and toss well to coat. Refrigerate for two hours. Serves: 4 |
